Today I'd like to share with you one of my favorite recipes from one of my favorite chefs, Rick Bayless. Pork Tinga is basically a mixture of pork, chorizo sausage, fire roasted tomatoes, chipotles, potatoes, and onions slow cooked for 6 hours until it turns into something so delicious. The pork ends up falling apart at the touch of a fork and everything melds together to create the most perfect filling for your tacos on taco night.
Leftover pork tinga is also amazing served with eggs and toast for a delicious weekend breakfast or served over tortilla chips with cheese, tomatoes, green onions, and sour cream for some awesome nachos.
